Fruit will deteriorate rapidly even when refrigerated once prepared. Check jar quality for nicks or cracks and avoid heat which can break jars. Sterilize jars by warm soapy wash and oven heat or dishwasher. do not use microwave. Ensure large enough kettle for rolling boil and use paraffin on jars without two part lids. Wipe rims, apply paraffin, let set, then lid loosely until fully hardened. Store in a cool dark place and avoid moisture under paraffin. If jelly is too soft, remake with liquid pectin and follow precise sugar lemon juice and pectin ratios, boil hard one minute, then seal hot. Follow recipes exactly for proper sugar acid and pectin balance. Mixing liquid and crystal pectin is not interchangeable. Some prefer no pectin, but results vary. adding pectin improves volume, color, and flavor and saves time.
