California Mushrooms Grow on Race Track Compost and Care
Ocean View Mushroom Growers in Huntington Beach is a large California producer led by Victor E. Distefano. The operation uses race-track bedding compost, grape pumice, cow manure, and chicken manure to create heat via organic matter and grow mushrooms year round. Mushrooms are harvested by twisting, stems trimmed, and are valued for low calories and high protein. They note darker brown varieties last longer visually and white mushrooms bruise easily.
