Inducing Shrivel on the Vine in California Raisins
About 175 acres in the San Joaquin Valley produced vine dried raisins last summer using a new drying pan developed by Vincent Petrucci of California State University Fresno. The process, first adapted for U.S. growers, uses severed fruiting canes and an ethyl oleate potassium spray to induce shrivel, yielding lighter colored sweeter raisins without the oxidized sun dried flavor.
