Meat charts from Texas Agriculture aid home cooks
Texas Agriculture Commissioner John C. White urges housewives to request three color charts detailing beef pork and lamb cuts. The beef map notes filet mignon comes from the T bone top loin and porterhouse areas, the pork map locates rolled fresh ham in the leg and smoked ham in the shank, and the lamb map places shish kebab cubes in the rear leg roast. Free copies available by writing to the Department in Austin and asking for the meat packet.

Chest Council Hones TB Fight At Harlingen Hospital
The Chest Council for Volunteer Services at Harlingen State Chest Hospital met in the hospital auditorium with about 120 attendees from the lower Valley. Dr Richard F Allison reported on admissions and outpatient clinic growth from 1959 60 to 1971 72, noting TB decline in admissions but high outpatient use and 45 TB cases per 100 000 in the region. Dr Victor M Zalma spoke as regional director of Public Health Region X. The South Texas Region began operations January 1 with headquarters in the hospital complex. An appreciation tea for volunteers and staff followed, chaired by Marjorie Marshall and with wives assisting at refreshments.
