Yogurt Gains Popularity and Nutritional Basics
Yogurt once dismissed as a health food is rising in popularity as demand grows while other dairy products decline. It is a thick cultured milk product rich in protein and calcium, usually made from partially skimmed milk with nonfat dry milk, and can be eaten plain with fruit or used in dips and dressings. Freezing is not advised and cooking requires gentle folding to avoid texture loss.
