Discovery in Manufacturing Lard Promises Vital Improvements
Chicago scientists Dr. R. C. Newton and Dr. D. P. Grettie of Swift & Company report a new process using a small amount of guaiacum-derived vegetable substance to improve lard. The method preserves freshness without refrigeration, yields odorless bland flavor, and maintains high digestibility and energy value. USDA approval allows production at the Swift Chicago plant.
