Storing Potatoes After Frost damage and frost injury
Weather this year favored most vegetable production but frost damaged many potatoes before harvest. Frosted tubers should be dried and discarded. 60-70 degrees F with 90 percent humidity aids healing. Store seed at 38-40 F and table stock at 45-50 F with sprout inhibitor. Build a small basement storage to ensure uniform temperature and exclude light to prevent chlorophyll and solanine.
