New Wheat Flour Substitutes Rules For Bread Products
The food administration issues new breaking rules on bread and roll substitutes. Bread and rolls may contain 25 percent substitutes, sweet yeast dough 83 1 3 percent, crackers 15 percent, cookies cakes pies fried cakes 3 3 1 3 percent, pastry 3 3 1 3 percent. Public eatings places cannot serve more than two ounces of bread and four ounces of quick breads per meal. Bakers urged to promote 12 ounce loaf and quick breads using two thirds substitute flours. Milk or cream words allowed on wrappers but milk bread must cost the same as milkless bread.
