Nitrite Free Meats May Keep Traditional Names Under USDA Plan
The Agriculture Department proposed labeling nitrite free bacon ham and similar products to show they are nitrite free or not fully preserved and must be refrigerated at all times. Assistant Secretary Carol Tucker Foreman said consumer requests spurred the plan and meat processors seek permission to use traditional names while warning of botulism risk without proper handling. The labels would warn that no nitrate or nitrite is added unless preserved by other processes and require refrigeration below 40 degrees F at all times.
