Douglas County Extension Home Economist Oletha Blevins spoke at Celebration Hall about why new canning methods matter. She explained how bacteria grow at different temperatures and that heat can stop growth but not kill spores. Pressure processing at ten pounds reaches 240F to kill bacteria. boiling water canning remains acceptable but requires care, especially with green beans tomatoes beets and cucumbers. She demonstrated pressure canning asparagus and tomatoes with specific jar sizes timings and acid adjustments. Salt is mainly for flavor and not required for preservation. follow lid instructions and maintain water levels for safe processing. Preserving produce at home is economical and healthful when using proper materials and methods.

Kirk Ringers to Perform at First Christian Church
The Kirk Ringers handbell choir, mainly Wichita Falls high school students, will give a free 8 p.m. concert at The First Christian Church on Wednesday. The varied program features handbell pieces and organ or piano works from original scores. Brent Stratten, director, holds degrees from SMU and Midwestern State, has studied at the Royal School of Church Music and other institutions. The group tours nationwide and has appeared at EXPO 74 and the 1973 AGEHR National Festival in Phoenix. An offering will be taken.
