Salt Sugar Safety In Home Canning And Freezing
Home canning and freezing may reduce salt and sugar without harming safety or texture. Water or light fruit juices can replace sugar in syrups, while high fructose corn syrup provides low calorie flavor. Salt can be reduced in many vegetables but remains essential in brined pickles and must be full strength in quick pickles and vinegars. Contact the Franklin County extension office for details.
