Canning Fruit Without Sugar in Household Food Prep
Department canning specialists advise preserving surplus fruit without sugar by using boiling water in place of syrup. Any fruit may be sterilized and kept in the pack with boiling water, though syrup yields better flavor, texture, and color. Pack fruit, sterilize in a hot water bath for 30 minutes, then seal and store in a cool dry place. For tin cans use quick cold-water shock after sterilizing, and a steam canner requires 10 minutes at five pounds of steam.
