The article argues that fish appeal lies in cooking as well as freshness. Hotels and shore restaurants promote attractively browned sea meals, drawing travelers to summer shore dinners. It notes trained cooks elevate fish to luxury status as meat diets shrink, and claims good relish from fish rivals beefsteak or lamb.
