Whipping cream tips for summer desserts
Tips from the American Dairy Association and Dairy Council on whipping cream. Chill the bowl and beaters in the freezer if possible, use a small deep bowl, beat rapidly and scrape the bowl, and stop at soft or stiff peaks as your recipe requires. For decorative piping the cream should be firmer, and ultra pasteurized cream heats more slowly but resists overheating. Fold in 2 to 3 tablespoons sugar per 2 cups whipped cream to make it sweet, yielding about 2 cups whipped cream from 1 cup.
