The Iowa Chop, an extra thick pork chop promoted by the Iowa Pork Producers and development commission, rivals New York Strip in fine dining. Nutritionist Kay Musca notes its center cut, at least 1 1/4 inches thick, offers flavor and tenderness when slow grilled or roasted. For home cooking, use slow heat, baste with butter or margarine, and finish with optional brown sugar butter or sauce near the end.
