Aging cream to improve whipping quality
The text explains aging cream at 45 degrees F to prevent acidity and souring. Aging above 60 degrees F risks souring or rancidity, especially past 48 hours. The aging time depends on butterfat content, with the first 24 hours delivering the strongest whipping quality and the largest gains in the first 48 hours.
