Freeze Vegetables In Brine For Best Results

Nutritionists at Iowa State College say a brine pack protects vegetables during freezing and travel, helping color and flavor stay intact. Most vegetables except spinach benefit from a weak salt solution, with cut corn and lima beans tolerating nonbrined packing. A 142 percent salt solution is achieved by 1 tablespoon salt per quart. for larger lots use 4 tablespoons per gallon.
