Will Modern Methods Improve Swiss Cheese Flavor and Quality
A Hoard’s Dairyman writer asks if modern methods can improve Swiss cheese and John Luchsinger responds that traditional standards endure. Twice daily milk use, early rennet, no starter, high heat, careful stirring, and careful curd handling preserve the cheese’s mild flavor and long keeping quality. Labor-saving aids like pulleys steam heating and cement facilities are adopted, but any change to core Swiss standards is rejected.
