Swiss Cheese Boom and Bust in Green County History
This profile of Nick Gerber and early Swiss cheese making in Green County traces the rise of German American factories from 1868 to 1875, the shift toward foreign type cheeses, and the later declines and consolidations led by new condenseries. It notes 1945 to 1948 production figures and the enduring role of Monroe as a trading center.

Cheese Factory Output Declines Yet Swiss Cheese Surges
Twenty years ago Green county had 152 plants producing 16 million pounds of cheese, half Swiss. Ten years back 125 plants produced 10,655,000 pounds, and last year 80 factories yielded 17,903,000 pounds with 14,569,000 pounds Swiss. The shift shows factory efficiency and modern plants boosting output despite fewer factories and reduced dairy land.

Soaring Steer Prices Won't Affect Regular Meat Supply
Beef on the hoof trades near record highs at the union stockyards yet shoppers won’t see those prices in butcher shops. Prime steers reached 41.50 per hundred pounds, with demand driven by restaurants and hotels rather than consumer markets. Percy Clark’s 17 Aberdeen-Angus head led the top load, likely culled for the livestock show. Prices remain near the September all time peak as show timing could influence future highs and market gaps between prime and average cattle persists.
