Texas meat inspection program earns praise and broad coverage
The Texas State Department of Health oversees a state meat inspection program started less than two years ago. It has earned USDA endorsement, opened a Yoakum training school in 1969, and now covers 646 plants with inspectors statewide. In 1970 alone 306.5 million pounds of red meat and 63.5 million pounds of poultry were inspected. The purple Texas stamp signals safe wholesome meat processed under state control.
