Proper handling preserves vitamins in vegetables
Vegetables hold many vitamins but poor prep destroys them. Bruising, excessive handling, and cutting expose nutrients to air. Prepare just before cooking or serving. Peel minimally to protect nutrients found under skins in potatoes, carrots, and other roots. Cook in jackets when possible.
Tips to Preserve Nutrients in Fresh Vegetables
Wash vegetables quickly under running water and avoid soaking. Start cooking frozen vegetables while still frozen to minimize vitamin loss. Rinse and swish in the fridge soon after purchase, especially for axeen vegetables, to keep them from wilting and preserve vitamin C.
