Potatoes Get Creative For Mealtime Variety
Extension Homie Economist Barbara Jones argues plain potatoes can become gourmet with new mashing liquids like sour cream vegetable juices or stock. Baked scalloped and stuffed potatoes offer variety, with potatoes boiled in skins handy for quick meals and a protein pair. Potatoes provide about 100 calories per medium, deliver vitamin C and minerals, and remain affordable and Manitoba grown.
