Ethnic vegetables lift farmers profits in New Jersey
Formisano Farms in South Jersey shifted to ethnic crops like cilantro and bok choy over 20 years, turning to niche markets as immigrant populations grow. Cilantro now accounts for about 10 percent of income as farmers expand lines and adapt from parsley and Italian eggplant to Chinese eggplant and edamame. Rutgers experts project a future mainstream market, aiding a coastwide East Coast plan from Connecticut to Georgia.
