Recipe for a cold cantaloupe soup with tarragon includes 2 melons 2 pounds each sherry salt pepper 6 sprigs tarragon. Scoop 12 melon balls per melon puree remaining flesh with juice and sherry, serve pyramid style with tarragon garnish and edges sprinkled. Yields 4 servings with 165 calories per serving.
A lamb dish uses trimmings and bones browned in olive oil then simmered with onions and thyme in broth. Carrot puree enriches the stock, then lamb fillets are seared and plated with a thyme garnish. The recipe yields a silky lamb sauce and warm servings.
