Porky’s Rollin’ Rib Rack brings smoked ribs to Dillon’s
Porky’s Rollin’ Rib Rack sells hickory smoked ribs and chicken at two Dillon’s stores in Lawrence, opening Fridays through Sundays. Co owners Dean Gibson and Dick Benton run the side business from a shared real estate background. The tent, sometimes in bitter cold, offers samples to shoppers while noting a secret seasoning and non barbecue style. Regular customers praise taste and value, and the operation has grown to about 30 similar setups in Kansas.
