Pork fat measuring and pork barbecue highlight Lancaster farming day
Dwight Younkin of Penn State demonstrated back fat probing on hogs using skin slits and muscle readings to estimate back fat inches. Glenn Kean showed hog cutting techniques and cut origins. From 5 to 7 pm a Lancaster County Swine Producers pork barbecue served center-cut chops to about 175 attendees.
