Meat Board Attacks Heart Association View on Saturated Fats
Dr. William C. Sherman of the National Live Stock and Meat Board challenges the American Heart Association stance on saturated fats. He argues only a few saturated fatty acids raise cholesterol and are not from meat, cites studies from Georgia and Harvard, and warns against broad dietary prescriptions without scientific trials. He notes potential dangers of replacing animal fats with polyunsaturates and cites animal studies on lifespan and disease.
