A Peck of Oysters Per Capita Annual Harvest

The oyster fishery is the United States leading fishery with about 80 million bushels produced yearly. Coastwise harvesting concentrates on the Atlantic and other coasts, and a single female oyster yields around 16 million eggs per spawning. Growth varies by temperature and food, with Long Island Sound oysters maturing slower than those in southern waters. Crowding causes deformations like enon oysters, and successful stock increases rely on collecting free-swimming young oysters and transplanting them to optimal areas.
