Ohio researchers report a dairy cow diet that doubles polyunsaturated fats in milk and lowers saturated fats from 56 to 40 percent. The test used a water soy flour mix fed to Jersey cows, increasing polyunsaturated to saturated fats ratio, aiding heart-disease risk reduction.
