Origin of Dirty Rice Traced by Creole Cuisine Expert
The Rice Journal reprint traced the origin of the term dirty rice, crediting Mrs. George M Halk of New Orleans for a plausible explanation. It notes the dish known as rice dressing, its prep with giblets and browned roux, and its spread from Creole and Acadiana parishes to Gulf Coast eateries. It also covers rice’s migration from Carolina plantations through Southwest Louisiana towns like Crowley, with note of Creole Creole influence and the 1940 draft bringing servicemen to Louisiana camps.
