Coffeecake with Sausage and Apples in Pancake Layers
A quick coffeecake made from pancake batter forms a two layer cake with a filling of browned sausage and apples. Sausage is sautéed until brown, apples are added and cooked briefly, then the second batter layer is added and baked under a broiler until golden. Serve wedges with apple butter or applesauce. Apples add tang to breakfast dishes and may be made into sauce without peeling.
