Dairy Facts About Butter Quality and Creamery Practice
A fragmented historical note discusses dairy processing and butter quality. It mentions the division of dairy work at a university, training, and methods for preventing sour flavors, including handling temperatures, churn, separators, and cleanliness to avoid mold and contamination.
Improvement of Butter Flavor by Pasteurization Temperature
M Morlensen conducts an experiment on butter made from cream samples pasteurized at 140 and 170 degrees Fahrenheit for 70 minutes and at 170 degrees for 70 minutes plus variants. Results show no pasteurization temperature above 170 degrees yielding clear superiority, while higher temperatures did not improve keeping quality. Neutralization of sour cream reduced undesirable tang and astringent notes in the butter.

United States Department of Agriculture notes 1924 and 1925 weather and seed selection issues impacted seed corn quality. Favorable 1925 growing season followed by late freezes risked poor germination and seed supply for spring planting. Officials urge farmers to test seed kernels from each field lot and consult state extension services for proper germination testing and seed selection guidance.
