High Prices for Dairy Product in Middle Northwest 1907

The Dairy Division of the U S Department of Agriculture reports that butter fat prices received by farmers in the Middle Northwest rose by 4 to 5 cents per pound in 1907 over 1906, lifting farmer returns by 20 to 25 million dollars. About 6,000 creameries exist nationwide, 1,800 of which are cooperative, with many small plants closing over the past decade. Reports from over a thousand creameries show local prices averaging 28 to 29 cents per pound for butter fat in 1907, lowest in June at 24 to 26 cents. Local creameries receive cream directly from farmers, avoiding buyer commissions and transport costs, while commission and freight add 0.5 to 0.75 cents per pound. Cream sold to agents shipping to other creaming points can bring 2 to 3 cents less per pound.
