Dairy Industry Faces Postwar Production Shifts
NSW dairy leaders warn butter output may not return to prewar levels as milk diverts to other products. McGillivray notes NSW butter production up to Feb 29 reached 75,044 long tons, but below prewar totals. He cites quality issues from improper handling, moisture and salt losses, and calls for standardized processes and upgraded factories to sustain cheese and other milk products.
