How to Cut a Top Sirloin
A favorite of many beefeaters the top sirloin can be cut in several combinations of steaks and roasts. With the fat side up use a sharp knife to slice steaks across the grain one to two inches thick for broiling one inch or less for pan broiling or pantrying. You may split the top sirloin and use for roasts or cut across the grain for smaller steaks.
