Extra Eggs Tips From Berwyne McAdams on Storage and Use
Leftover yolks stay best covered in water while whites are kept cold in a covered dish. Use whites in scrambled eggs or make orange meringues for puddings, tarts, and pies with orange juice and rind. Yolks suit soft custard or cooked salad dressings, or a gold cake. Egg noodles add to soups, and a glaze on coffee cake or a white sauce mixed with beaten eggs enriches vegetables.
