Effect of iron on digestion in gastric juice
An inaugural Berlin dissertation by Dr A Duesterhoff shows that organic iron salts markedly hinder peptic digestion. In tests with artificial gastric juice and fibrin, iron salts reduce digestion, likely due to hydrochloric acid displacement of organic acids, with perchloride and phosphate also impeding digestion. Reduced iron also disrupts digestion but to a lesser degree. Ferrous salts appear to interfere less than ferric salts.
