Poultry and Egg Industry Notes From Early Iowa Market Discussion
A reporter recalls remarks by Thomas J. Ryan of Charles F. Maguire Inc. on Iowa as a top producer of butter eggs and poultry. He compares Danish butter to American, cites Minnesota production, discusses duties on imports, oleo margarine trends, and the growth of frozen eggs for winter use across major U.S. markets.
Price trends and storage affect winter egg markets in 1900s
The piece notes scarcity and winter losses, recounting a New Orleans broker’s failed corner attempt and vast losses. It contrasts small and large houses keeping eggs in storage, describes merchants buying cold storage eggs, and explains how many housekeepers unknowingly use old eggs. California eggs are premium quality, white, and sold at 1c to 12c per dozen with freight and express costs. California producers form an association and sell in New York and other eastern cities at public auction.
