Judging Wheat at Fall Fairs: Baking Test Suggested
W C Whitcomb of Montana State College proposes adding a baking test to wheat judging at fairs. He argues the baking pan proves quality better than external traits, with a new scorecard assigning points to purity gluten content and bread texture among others. The method since three years at Montana State fair and one year at Midland Empire fair shows educational value and may expand to other grains.
