Microbes in Sugar Bowl Damage Cuban Sugar Crop
About one per cent of Cuba's sugar crop, worth 1.5 million dollars, is destroyed yearly by unseen molds and bacteria. It is estimated that each American consumes 81.84 pounds of sugar annually, and at current loss rates 873000 people could be supplied with the sugar spoiled by germs. The molds remove the sucrose reducing sweetness.

Color Preferences in Butter Quality and Color Influence
The article explains that butter color should be clear and even though shade does not always reflect quality. High churn temperatures quicken production but dull color, while low temperatures and long churning time also harm color. Overwashing or overworking can spoil color, and lighter butter comes from sweet cream due to more buttermilk.
