In Fremont, Mattos Elementary students led by Principal Phil Holmes and teacher Lance Miller survey lunch waste. Eleven fifth graders became sixth graders and expanded a project to cut waste by surveying tray disposal, adjusting menus, and encouraging cleaner habits amid 19 of 107 meals noted as wasteful.
