University of Minnesota extension meats specialist Richard Epley disputes the common USDA figure of 107 pounds per person per year. He says accounting for carcass weight, processing, cooking and plate loss yields about 50 pounds of beef per American annually, with pork about 45 pounds and veal and lamb about one pound each.
