Cooking Venison to Prevent Waste in Hunting Season
Home cooks can prevent waste of venison by proper preparation and storage. Remove fat and pare to avoid toughness, cook tender cuts like chops and roasts at high heat, and use bacon or pork fat to improve flavor. Sausage can be made with adequate pork fat, and venison keeps best when dried, smoked, or canned. An extension note mentions legal preservation limits and permits from the Pennsylvania Game Commission.
