Substituting Evaporated or Condensed Milk in Recipes
To replace regular milk, use 1 cup evaporated milk plus 1/4 cup water per cup of milk. Condensed milk can replace milk similarly but reduce sugar accordingly. When substituting for cream, increase shortening and reduce milk accordingly, e g for 1 cup cream use 1/3 cup shortening and 2/3 cup milk. Sour milk can be made by adding 1 tablespoon lemon juice or vinegar per cup of milk, or use sour milk in place of sweet milk with adjustments to leavening.
