The USDA Southern experiment station in New Orleans developed a tasteless edible fat from cottonseed oil. It coats foods to block oxygen and prevent freezer burn while remaining pliable below 115 degrees, and can be washed off with hot water if desired. It also serves as a coating for cheeses and as an emulsifier in baked goods. The fat costs about 50 cents a pound and demand is expected to grow. Economists estimate 35 million pounds of edible coatings are used now and may double in a few years.
