Buffalo not hogs in market Cascade farm family raises animals
A Cascade farm family focuses on buffalo rather than hogs. They raise buffalo, slaughter, and distribute meat to local buyers, outlining a niche in the rural market and highlighting practices for humane handling and direct sales.
Cascade couple shifts from hogs to buffalo meats
Low hog and cattle prices in 1998 pushed Rodney and Kathy Coohey near Cascade to diversify into buffalo. They built a custom slaughter and cutting house on their farm, opened White Water Bison Meats, and plan Chicago distribution with about 60 percent of sales to restaurants and 40 percent retail.
