Maple syrup at Indian Creek Center shows Parrott's sap craft
Joe Parrott leads the maple sap gathering at Indian Creek Center in Cedar Rapids, tapping about 200 to 250 trees yearly. He began volunteering after seeing a Gazette ad, uses both hand and cordless drills, and relies on a hydrometer to judge readiness. Sap yields about 40 gallons per 1 gallon syrup, and a propane evaporator finishes the process. Parrott, diabetic, cannot taste the syrup, and workers assist during syrup season with his woodworking and garden hobby continuing year round.
