Enzyme Linked to Bloat in Alfalfa Feed Says Wisconsin Scientist
Roy E. Nichols of the University of Wisconsin reports that the enzyme pectin methyl esterase PME drives bloat in cattle when alfalfa is high in moisture. Tests with Hereford cows in 1964 linked bloating days to higher PME and moisture, while nonbloat days showed lower PME. Farmers can reduce bloat by delaying PME activity, avoiding high moisture forage, or spraying linseed oil, but a foolproof method remains elusive. Nichols notes bloat costs may reach 50 million dollars annually.
