Cherries to Keep: Two Preservation Methods
A Cookery Expert offers two methods to preserve cherries for later use. The first dries pitted cherries by boiling briefly in water with sugar, then drying them in an oven or sun with sugar rolled on. The second makes crystallised cherries by simmering tender fruit in a sugar syrup over three days, drying in sun and cool oven, then storing in sugar and paper between layers.
