Canning Tips for Less Tender Meats From Missouri College

Miss Flora Carl from the Missouri College of Agriculture explains that less tender cuts yield good flavor and suit canning as pectorasts and stews. Rough cuts can be canned as sausage, hamburger, mincemeat, or meat loaf, with bonier pieces boiled and packed in jars with the cooking liquid. Bone can be boiled for stock, and clear soup stock concentrates can be canned. Some prefer combining meat with other foods for canning.
